NON-SQL tutorial on how to use ServiceBuilder

Does anyone have example code/tutorial of using service builder to create a class to access something that is not a DB table? (Preferably SOAP)
(There really only seems to be the one example on the net and it involves creating a book table in a database.)

Here's a link to what I think I need to do but it's a little to high level (It does not explain what's required in service.xml)
