I set up two local liferay tomcat servers. Lets call them live (port 8280) & staging (port 8180).

In Live portal-ext.properties, I set:
tunnel.servlet.hosts.allowed=127.0.0.1
axis.servlet.host.allowed=127.0.0.1

In Stage, I configured it as a remote staging server:
Remote Host/IP: 127.0.0.1
Remote Port: 8280
Remote Path Context:
Remote Site ID: 19

I then added a web content display and published it to live. That worked as expected.

I went to live and attempted to edit the content in that display. It let me. Now I had set up a local live/stage setup before. And it did not allow me to edit things in the live environment. How do I get the remote stage/live setup to duplicate this functionality?

Also, the WebContent I pushed over from remote stage seems to have lost its image assets. This is a completely fresh out of box setup. Using the Web Content provided with Liferay. I just added one new WebContent Display Portlet to a page, then set one of the existing WebContent pieces in it (Who Is Using Liferay). Edit: This functionality is now working correctly for me.

Any help you can provide would be greatly appreciated. I'm a bit confused over why the two staging options behave so drastically different.

I believe not exactly sure about your situation, but the recommended solution from my end is

tunnel.servlet.hosts.allowed=127.0.0.1,SERVER_IP,10.0.8.15
tunnel.servlet.https.required=true
axis.servlet.hosts.allowed=127.0.0.1,SERVER_IP,10.0.8.15
axis.servlet.https.required=true
