What exactly are they and when would they change?

I looked at some of the javadocs and wikis on the liferay site, but I still don't have a solid grasp on what they are.

What I'm really trying to get it as, if I had a website for a single group of people, would every document on that site have the same company ID? And if so when would that document's group Id change?

Liferay supports multi-tenant. This means there can be several domain url each with different administrator. Each of these tenant will have an unique company Id. Since you don't seem to be using this feature, there would only be one company Id used throughout your portal.

Group Id is a little more complex. Each site and group will have a unique group Id. If you have only one site and no group, you'll only have one group Id.
